Removing Stone Veneer Grout?

The company that did our exterior stone veneer did not do a good job in maintaining consistency when they grouted it. The grouting was done over a couple of days and they used different people so I'm assuming they didn't use the same mix recipe.
There are areas where the grout is much darker than the rest of the house. The company is no longer in business so I can't go back to them to fix it. My question is can I apply another layer of grout over top of the existing grout? If not, are there any alternatives to removing the grout and regrouting? If not, what is the best way of removing the grout? I don't remember what the grout technique is called but it is a thick grout joint, probably 1-1.5 inches wide.

The way to correct this problem is to cut back the existing grout a minimum of 1/2 inch. This should be done by using a small 4" grinder with a diamond blade. Ensure that the grout left is rough so the new grout will adhere properly to it.
The level of difficulty on this project, on a scale of 1-10 is a 9. If you are doing this yourself, please adhere to all safety precautions. i.e. goggles, face shield, dust mask, etc...
